Holiday Food Selections Available for Purchase

chelsiecooking1Okay you guys asked for it… here it is! Everything is made from whole, plant based ingredients. That means no refined flours or sugars, no dairy, no animal products and no artificial ingredients. Basically that translates into “food that is made from real, quality ingredients” which makes the end result taste amazing. I use flours like spelt & brown rice in place of bleached all-purpose flour… coconut palm sugar or maple syrup in place of white sugar and corn syrup and coconut oil in place of vegetable or canola oil. Most of the ingredients are organic (about 80%) and I have lots of soy free and gluten free options available. If something is NOT labeled as GF or SF, it may be able to be made that way – just ask. If you have any allergies PLEASE let me know ahead of time, even if it is labeled allergen appropriate.

V = Vegan
GF = Gluten Free
SF = Soy Free Continue reading “Holiday Food Selections Available for Purchase”

Community Juice Fast 2015

Juice FastIt’s almost that time again! And no I’m not talking about the holidays… I’m talking about what comes after! I’m talking about cleaning out the cookies & cocktails and feasting on liquid nutrition for a few days getting our internal pipes squeaky clean for the year ahead. Sound horrendous? It’s actually the exact opposite and it’s not me that makes it fun – it’s you guys. Trust me, when I do them by myself they are way more dull! It’s when you guys come together as a community and share your open minds, authentic experiences, beautiful support for one another, hilarious pictures and silly anecdotes that makes me seriously look forward to this Community Juice Fast.

So how does this work you ask? First off – there is no charge. Besides the cost to make your juice there is no fee to participate. I offer this cleanse on a donation bases so what you would like to contribute you can.

Second, you don’t even have to live locally to participate. I will hold an informational webinar meeting on January 2nd @ 8:30pm so you can dial in no matter where you are in the world. During this webinar I will go through the process of what this cleanse looks like, what to expect and a lot of the commonly asked questions as well as any questions you guys have that I haven’t already addressed.

“But what if I’m not available when the webinar is being held” you ask? Sign up anyways. At the completion of the webinar, I will email out the recording to all participants who signed up so even if you end up missing the webinar, you are able to listen in, it just won’t be live.

The juice cleanse will officially start January 5th. I recommend 5 days but whether you do 1 day or 100 days – (yikes!) there is healing to be found through this process. If that day doesn’t work for you, after attending the webinar you will have all the information to start a little early or a little later if need be. I’m sure you won’t be the only one.  Continue reading “Community Juice Fast 2015”

Raw Caesar Dressing

This is one of my favorite things I’ve ever made. I have to share… right now…

For me, the perfect meal is a huge bed of green with a fresh & vibrant dressing… piled high with lots of good stuff. Growing up, Caesar Salad was always one of my favorites but because of the laundry list of ingredients that aren’t health promoting, I gave this one up a long time ago. Well… it’s back… and it’s better than it’s ever been before. The best part? Yes – it has tons of good for you ingredients but it seriously is SO easy! Continue reading “Raw Caesar Dressing”

An Interactive Vegan Date Night

I’m very excited to announce I’m teaming up with my friend Kristen at The Orlando Date Night Guide to bring you the first Interactive Vegan Date Night!

Somewhere along the lines the phrase “healthy food” became synonymous with “boring food” and if you know me at all… you know I couldn’t disagree more! To debunk this myth, I’ve organized this event for discerning foodies… designed to be a fun, healthy and informative date night all wrapped into one.

WHEN: Saturday, June 7, 6:30pm to 9pm Continue reading “An Interactive Vegan Date Night”

Gourmet Soiree & Upcoming Events!

Wow! What a busy weekend!

It was the 4th session of “Eat, Cook & Learn” – we cooked more sweets than we knew what to do with… well… we figured out what to do with them 😉

Chocolate Zucchini Cupcakes, Raw Black & Blue Cobbler, Oatmeal Buckwheat Raisin Cookies, Banana Soft Serve and my famous Double Chocolate Brownies… all made just subtly sweet with sweeteners like coconut sugar (my favorite), maple syrup & dates… and most of our desserts were also Gluten Free (or GF option).

Bakers Tip: Using roasted nuts like walnuts and almond meal make for dense, decadent desserts while avoiding congenitally refined flours and fats. Check out “desserts” under my recipe tab for some ideas of things to try. Continue reading “Gourmet Soiree & Upcoming Events!”

Pineapple Mango Salsa & UPDATES!

Postings have been far and few between but don’t let that fool you! Lots of things are happening behind the scenes! I’ve been busy detoxing from the fabulous Vegan (but not necessarily healthy) Food I had while in NYC, finishing up the end of the 3 Month Program as well as prepping for this past session of Eat, Cook & Learn.
